Foeder Aged Saison w/ Trousseau
Back in June of 2019 we had the pleasure of hosting the Burial crew to brew a clean saison refermented with native microflora from wine grapes. Following a four month rest in an American white oak foeder, we blended a portion of this young saison onto carbonically macerated Trousseau grapes for a month long soak. After a month's maceration, the two beers were reunited, allowing the microflora from the grapes to drive a secondary fermentation of the saison. Notes of candied violets, watermelon, and orange blossoms intertwine with chamomile, lime zest, and river rock to reveal a delicate saison that continues to bloom in your glass.
